Today's Experiment: Cream of Chicken soup, from scratch.

Turned out reasonably tasty, but the recipe advocated too much sugar, resulting in a sweeter soup than I like or expected. I cut down on it a little with some white wine, which also gave the soup a nice tang. Next time, though, half the sugar and possibly use half-and-half instead of milk, to give the soup a bit more body without having to add as much flour.
Also, chopping chicken, I think, would be easier /after/ they're cooked. Next time, possibly use left over chicken from one of my other experiments.
