This week's resolution to cook my own food? Success! I haven't gone out to eat even once, but I still managed to make meals that were tasty and did not consist of ramen. There might even have been some nutritional content involved.
This weeks menu:
I started out last Sunday with beef stew, made from scratch. I used mostly organic veggies, except for the potatoes. The only organic potatoes that the store had came in bags, and I simply don't use that much potato before they start yearning to grow and reproduce. It actually thickened up really nicely (not usually for me and anything gravy-like), and was very tasty. Also, there's no way to make a small amount of stew: half of it went into the freezer, and the other half provided dinner Sunday, Tuesday, and Wednesday.
Monday, I didn't want beef stew, so instead I cheaped out with Campbell's soup and a grilled cheese sandwich. To be fair, the soup had been in there for a while (so I didn't have to buy it), and my sharp cheddar slices were about to go the way of the dodo. It was a tasty thing.
Thursday, I didn't eat dinner. Just didn't feel all that hungry. (This is not all that unusual for me.) I did find a frozen steak in the freezer, though, so I stuck it in the refrigerator to thaw.
Friday, I made chicken quesadillas! They were /very/ tasty. I had some salsa picante hot sauce that I added to the chicken and onions while they were pre-cooking, and I used the last of my 'authentic mexican blend' shredded cheese from Sargento...which, by the way, actually produces a rather nice melty cheese that isn't quite as mild as just using the queso blanca.
Saturday, I had albacore tuna sammiches for lunch, and that thawed steak for dinner. It was raining, so I couldn't grill the ribeye, but I pan fried it with some onions and seasonings, and it turned out pretty good. (If you notice a lot of onion in my food this week, that's because I went ahead and chopped up a whole, big yellow onion at the beginning of the week, put it in a zip-lock back in the fridge, and have been using it this whole time. It works!)
Finally, today I made chicken fried rice. Used up the second of my three chicken breasts, more onion (with a little left over for the beef curry planned for early next week), the last of my green peas, a few eggs, and the last of my soy sauce and rice. Originally, the plan had been to make a Whole Bunch of rice for the beef stew, and use the leftovers for fried rice...but, looking at my rice reserves, there wasn't enough, so I had the stew over bread, and the rice today. Very tasty, and it makes enough that two more servings went back into the fridge for later on in the week.
I still have the makings for chicken alfredo (with rotini), beef curry, another can of soup, and more tuuuuna. I could probably go another week without groceries, but the curry will need rice, so I'm going to replenish a bit while I'm there.
